Here's a recipe that has been a family favorite ever since my sister-in-law made it for Thanksgiving one year. Everyone LOVED it so much. It just wouldn't be Thanksgiving without it!
Shantele's Sweet Potato Casserole
3 C sweet potatoes mashed (fresh baked, tender ones are best...but you can use the canned yams too)
2 beaten eggs
1 C granulated sugar
1/2 C milk
3/4 C melted butter
1/2 tsp. vanilla
1 C brown sugar
1/3 C flour
1/4 C margarine or butter
Mix the casserole ingredients together and place in a 9x9 dish. Mix the topping ingredients together and crumble over the top. Bake at 350 degrees for about 40-45 minutes. Sprinkle mini marshmallows over the top and bake for the last 5-10 minutes.
